These cookies are so tasty, nutritious, and amazingly easy to make! You may want to double the batch as they won’t last long.

This recipe can be found on bags of conventional and organic Whole Wheat Flour.

Ingredients:

  • 1 1/4 cup Whole Wheat Flour
  • 3/4 cup Rolled Oats
  • 1 tsp ground Cinnamon
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/4 cupu Butter,softened
  • 1/4 cup Peanut Butter
  • 3/4 cup Brown Sugar
  • 2 Tbs Honey
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1/2 cup Almonds
  • 1/3 cup Pumpkin Seeds
  • 2 Tbs Flaxseeds
  • 1/2 cup dried Cranberries

Directions:

Preheat oven to 350 deg F. Grease 2 baking sheets.

Whisk together flour, oats, cinnamon, baking soda, baking powder, and salt. Set aside. In a large bowl, beat butter, peanut butter, brown sugar, and honey until smooth. Add egg and vanilla and beat until combined. Add flour mixture and stir until just combined. Gently mix in almonds, pumpkin seeds, flaxseeds, and cranberries.

Roll dough into balls, about 2 Tbs at a time, and place on baking sheets, spacing 1 inch apart. Flatten each cookie slightly. Bake until golden brown, about 10 minutes. Cool on pan for 5 minutes. Makes 20 cookies.
