Ingredients (Serves 4-6):
- 6 medium ripe tomatoes, roughly chopped
- 1 cucumber, peeled, seeded, and chopped
- 1 bell pepper (red or green), chopped
- 1 small red onion, chopped
- 2-3 garlic cloves, minced
- 2-3 tablespoons olive oil
- 2 tablespoons red wine vinegar (or sherry vinegar)
- 1-2 slices of day-old bread, crust removed (optional, for a thicker soup)
- 1 cup cold water (adjust for desired consistency)
- Salt and black pepper, to taste
- Optional toppings: diced cucumber, croutons, diced bell pepper, or a drizzle of olive oil
Instructions:
