Gazpacho is a refreshing cold soup that’s perfect for hot days! Here’s a classic recipe for a traditional Spanish-style gazpacho:


Ingredients (Serves 4-6):

  • 6 medium ripe tomatoes, roughly chopped
  • 1 cucumber, peeled, seeded, and chopped
  • 1 bell pepper (red or green), chopped
  • 1 small red onion, chopped
  • 2-3 garlic cloves, minced
  • 2-3 tablespoons olive oil
  • 2 tablespoons red wine vinegar (or sherry vinegar)
  • 1-2 slices of day-old bread, crust removed (optional, for a thicker soup)
  • 1 cup cold water (adjust for desired consistency)
  • Salt and black pepper, to taste
  • Optional toppings: diced cucumber, croutons, diced bell pepper, or a drizzle of olive oil

Instructions:

  1. Soften the Bread (if using):
    • Place the bread in a small bowl with water to soften for a few minutes. Squeeze out excess water and set aside.
  2. Blend Ingredients:
    • In a blender or food processor, combine the tomatoes, cucumber, bell pepper, onion, garlic, olive oil, vinegar, and softened bread. Blend until smooth.
  3. Adjust Consistency:
    • Add cold water a little at a time to reach your desired consistency. For a chunkier texture, pulse the blender instead of blending fully.
  4. Season:
    • Add salt and black pepper to taste. Blend briefly to mix.
  5. Chill:
    • Transfer the gazpacho to a large bowl or pitcher. Cover and refrigerate for at least 2 hours, or until thoroughly chilled.
  6. Serve:
