Ingredients

  • 1/2 cup (50g) cocoa powder (unsweetened)
  • 1 tsp baking powder

  • 2 large eggs
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1/2 cup (120ml) milk (or buttermilk for extra moisture)
  • 1/2 cup (120ml) hot water or coffee (coffee enhances chocolate flavor)

For the frosting:

  • 1 cup (227g) unsalted butter, softened
  • 2 1/2 cups (300g) powdered sugar
  • 1/2 cup (50g) cocoa powder
  • 1/4 cup (60ml) heavy cream or milk
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

1. Make the Cupcakes

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, sugar, oil, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Stir until just combined.
  5. Mix in the hot water or coffee—this will make the batter thinner but helps create a moist cupcake.
  6. Pour the batter into the cupcake liners, filling each about 2/3 full.
