Vanilla custard is a rich, creamy dessert made from a mixture of milk or cream, egg yolks, sugar, and vanilla. It’s smooth and velvety, with a delicate sweetness and a fragrant vanilla flavor. Custard can be enjoyed on its own or used as a filling for pastries, tarts, and other desserts.
Easy Vanilla Custard Recipe
Ingredients:
- 2 cups (500 ml) whole milk
- 4 large egg yolks
- 1/4 cup (50 g) granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon pure vanilla extract
- A pinch of salt
Instructions:
- Heat the Milk:
- In a medium saucepan, heat the milk over medium heat until it just begins to simmer. Do not let it boil.
- Whisk the Egg Yolks:
- While the milk is heating, whisk the egg yolks, sugar, cornstarch, and salt together in a medium bowl until smooth and slightly pale.
- Temper the Egg Yolks:
- Slowly pour about 1/2 cup of the hot milk into the egg yolk mixture, whisking constantly to temper the eggs. This prevents them from curdling.
- Cook the Custard:
- Pour the tempered egg mixture back into the saucepan with the remaining milk. Cook over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5-7 minutes. Do not let the mixture boil.
- Add Vanilla:
- Remove the custard from the heat and stir in the vanilla extract.
- Strain (Optional):
- For an extra smooth custard, you can strain the mixture through a fine-mesh sieve into a clean bowl.
- Chill:
- Cover the surface of the custard with plastic wrap to prevent a skin from forming, and let it cool to room temperature. Then refrigerate until fully chilled, at least 2 hours.
- Serve:
- Serve the vanilla custard on its own, or use it as a filling for tarts, eclairs, or other desserts.
Enjoy your delicious homemade vanilla custard!
