Here’s a step-by-step recipe for a classic pumpkin pie:

Ingredients

For the crust:

  • 1 ¼ cups (160g) all-purpose flour
  • ½ tsp salt
  • ½ cup (115g) cold unsalted butter, cubed
  • 2–4 tbsp ice water

For the filling:

  • 1 ¾ cups (425g) pumpkin puree (canned or homemade)
  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) heavy cream
  • ½ cup (120ml) whole milk
  • 2 large eggs
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp salt

Instructions

1. Make the crust

  1. In a bowl, combine the flour and salt.
  2. Add the cold butter and cut it into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, one tablespoon at a time, mixing until the dough holds together.
  4. Shape the dough into a disc, wrap it in plastic wrap, and chill for at least 30 minutes.

2. Prepare the filling

  1. In a mixing bowl, whisk together the pumpkin puree, sugar, cinnamon, ginger, nutmeg, cloves, and salt.
  2. Add the eggs and mix until combined.
  3. Stir in the heavy cream and milk until smooth.

3. Assemble the pie

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the chilled dough on a floured surface and fit it into a 9-inch pie dish. Trim and crimp the edges.
  3. Pour the pumpkin filling into the crust.
