Classic Fettuccine Alfredo Recipe

A rich, creamy, and delicious Italian pasta dish that’s easy to make at home!

Ingredients:

  • 12 oz fettuccine pasta
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese (freshly grated for best results)
  • 2 cloves garlic, minced (optional)
  • Salt and black pepper, to taste
  • ¼ tsp ground nutmeg (optional, for added depth)
  • ½ cup pasta water (reserved)
  • Chopped fresh parsley (for garnish)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add fettuccine and cook according to package instructions until al dente.
    • Reserve ½ cup of pasta water, then drain the pasta.
  2. Make the Sauce:
    • In a large skillet over medium heat, melt the butter.
    • Add the minced garlic (if using) and sauté for about 30 seconds until fragrant.
    • Pour in the heavy cream and bring to a gentle simmer. Stir occasionally.
  3. Add the Cheese:
    • Reduce the heat to low and slowly whisk in the grated Parmesan cheese until melted and smooth.
    • If the sauce is too thick, add some of the reserved pasta water a little at a time.
    • Season with salt, black pepper, and nutmeg (if using).
  4. Combine with Pasta:
    • Add the drained fettuccine to the skillet and toss to coat the pasta evenly in the sauce.
  5. Serve & Garnish:
    • Transfer to serving plates, garnish with freshly chopped parsley, and serve immediately.
    • Optional: Top with more grated Parmesan and freshly cracked black pepper.

Tips for the Best Alfredo Sauce:

✔ Use fresh Parmesan for the best melt and flavor. Avoid pre-shredded cheese, as it doesn’t melt as smoothly.
Don’t overheat the sauce—keep it on low heat to prevent the cheese from clumping.
✔ If the sauce is too thick, add more pasta water or a splash of milk to loosen it.
