Ingredients

For the dough (or use pre-made pizza dough):

  • 3 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 ½ tsp salt
  • 1 cup warm water
  • 2 tbsp olive oil

For the filling:

  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • ½ cup marinara sauce (optional inside or served on the side)
  • Your choice of toppings (pepperoni, cooked sausage, mushrooms, spinach, peppers, onions)
  • 1 tsp Italian seasoning
  • 1 egg (for egg wash)

Instructions

1. Make the Dough (Skip if Using Pre-made)

  1. In a small bowl, combine warm water, yeast, and a pinch of sugar. Let it sit for 5-10 minutes until frothy.
  2. In a large bowl, mix the flour and salt. Add the yeast mixture and olive oil.
  3. Knead the dough for 8-10 minutes until smooth and elastic. Cover with a damp towel and let rise for 1 hour, or until doubled.

2. Prepare the Fillings

  • In a bowl, mix the ricotta, mozzarella, Parmesan, and Italian seasoning.
  • Set your favorite toppings nearby.

3. Shape the Calzone

  1. Preheat the oven to 425°F (220°C).
  2. Divide the dough into 4 equal pieces for individual calzones. Roll each piece into a circle about 8-10 inches wide.
  3. Spread some cheese mixture on one half of the dough, leaving a 1-inch border. Add any toppings you like.
  4. If you want marinara inside, add a spoonful on top of the filling.

4. Seal the Calzone

  1. Fold the other half of the dough over the filling to form a half-moon shape.
  2. Press the edges together, then fold them inward and crimp tightly.
  3. Brush the top with egg wash for a golden finish (optional). Cut a small slit or two on top to release steam.
