Vanilla Cupcake Recipe

- ¾ cup (150g) granulated sugar

- ½ cup (120ml) whole milk (room temperature)
Instructions:
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- Mix the dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- Cream butter and sugar: In a large bowl, use a hand or stand mixer to beat the butter and sugar until light and fluffy (about 2-3 minutes).
- Add eggs and vanilla: Beat in the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
- Combine dry ingredients and milk: Add the flour mixture in 3 parts, alternating with the milk in 2 parts (beginning and ending with the flour). Mix until just combined – do not overmix.

- ½ cup (115g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1-2 tbsp milk or cream
- 1 tsp vanilla extract
- Beat the butter until creamy.
- Gradually add the powdered sugar, mixing until smooth.
- Add the vanilla and a bit of milk until the desired consistency is reached.
