Oatmeal muffins are hearty, nutritious, and easy to make. Here’s a simple recipe to guide you:

Ingredients

  • 1 cup rolled oats
  • 1 cup milk (or plant-based milk)
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1/2 cup brown sugar (or honey)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/2 cup melted butter (or vegetable oil)
  • 1 tsp vanilla extract
  • 1 egg

Optional Add-ins:

  • 1/2 cup raisins, chocolate chips, chopped nuts, or blueberries.

Instructions

  1. Prepare the oats:
    • Preheat your oven to 375°F (190°C).
    • Grease a muffin tin or line with paper liners.
    • Soak the oats in milk for 10–15 minutes to soften.
  2. Mix dry ingredients:
    • In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Combine wet ingredients:
    • Stir the egg, melted butter, and vanilla into the soaked oats.
  4. Mix it all together:
    • Add the wet mixture to the dry ingredients and stir until just combined. Avoid overmixing. Fold in any add-ins.
  5. Bake:
    • Divide the batter evenly among the muffin cups (fill about 2/3 full).
    • Bake for 18–22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  6. Cool and enjoy:
    • Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
