Classic Fettuccine Alfredo Recipe
A rich, creamy, and delicious Italian pasta dish that’s easy to make at home!
Ingredients:
- 12 oz fettuccine pasta
- 4 tbsp unsalted butter
- 1 cup heavy cream
- 1 cup grated Parmesan cheese (freshly grated for best results)
- 2 cloves garlic, minced (optional)
- Salt and black pepper, to taste
- ¼ tsp ground nutmeg (optional, for added depth)
- ½ cup pasta water (reserved)
- Chopped fresh parsley (for garnish)
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add fettuccine and cook according to package instructions until al dente.
- Reserve ½ cup of pasta water, then drain the pasta.
- Make the Sauce:
- In a large skillet over medium heat, melt the butter.
- Add the minced garlic (if using) and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir occasionally.
- Add the Cheese:
- Reduce the heat to low and slowly whisk in the grated Parmesan cheese until melted and smooth.
- If the sauce is too thick, add some of the reserved pasta water a little at a time.
- Season with salt, black pepper, and nutmeg (if using).
- Combine with Pasta:
- Add the drained fettuccine to the skillet and toss to coat the pasta evenly in the sauce.
- Serve & Garnish:
- Transfer to serving plates, garnish with freshly chopped parsley, and serve immediately.
- Optional: Top with more grated Parmesan and freshly cracked black pepper.
Tips for the Best Alfredo Sauce:
✔ Use fresh Parmesan for the best melt and flavor. Avoid pre-shredded cheese, as it doesn’t melt as smoothly.
✔ Don’t overheat the sauce—keep it on low heat to prevent the cheese from clumping.
✔ If the sauce is too thick, add more pasta water or a splash of milk to loosen it.
